Star Anise Caramelized Onions

We've all seen 'caramelized onions' on menus and on cooking shows. We know how good they taste, but it always seems to be too much trouble to make them ourselves, so we never do. But it's really easy to make caramelized onions. Really. If you can cut an onion up and stir stuff around in a pan, then you can make caramelized onions.

For extra sweetness and an added aromatic blast, stir in a couple of whole . The finished onions are a great addition to burgers, pizza or in mashed potatoes. The aftertaste of anise will bring out the beefiness in the onions and you'll find yourself not making onions any other way!�

Star Anise Caramelized Onions

Ingredients

2 medium to large onions (red, white, yellow or sweet), sliced
2 tablespoon olive oil
1/2 teaspoon 2 �

Directions

Put a frying pan on medium heat, and add oil. When the oil is hot, add sliced onions, salt and star anise. Stir from time to time - if they start to get too brown, turn down the heat a little. (You want a 'caramelized' brown, not a 'burnt' brown.)

Once they start to get translucent, give them a stir and then leave them alone for about 10 minutes. Then stir them gently - they should be releasing their liquid, and starting to caramelize and sweeten.

Every 3 minutes or so, go back and stir them. Once they've reached the color (and flavor) you want, take them off the heat. Let them cool to room temperature.

When cool, put in a covered container and place in the refrigerator - they will keep for a week.

Notes:
- Add to softened butter - it makes a wonderful topper to steak, seafood or chicken.
- Toss with pasta and whatever vegetables, cooked meats or cheeses you have in your refrigerator.
- Add to a grilled cheese sandwich or burger.
- Add to saut�ed vegetables during the last minute of cooking.

Mix it up and season them with:
- Alderwood Smoked Salt for a smokier flavor.
- Seasoned Salt - Svaneti for a delicious more savory flavor.
