Ingredients
- 1 block of tofu, drained and pressed
- 2 tablespoons soy sauce
- 2 tablespoons maple syrup
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch
- 1 tablespoon vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 carrot, julienned
- 1 broccoli crown, cut into florets
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 green onions, sliced
- 1/4 cup cashews, chopped
- Cooked rice, for serving
Directions
- In a small bowl, whisk together soy sauce, maple syrup, rice vinegar, and cornstarch to make the teriyaki sauce.
- Cut the pressed tofu into bite-sized cubes.
- In a non-stick skillet, heat vegetable oil over medium heat.
- Add tofu to the skillet and cook until lightly browned on all sides.
- Pour the teriyaki sauce over the tofu and stir to coat. Cook for an additional 2-3 minutes.
- Add garlic, ginger, bell peppers, carrot, and broccoli to the skillet. Stir-fry for about 5 minutes, until vegetables are tender-crisp.
